Is there a limit to how many times I can skip the month on Fabletics?

No. Fabletics VIP Members can skip as many months as they like, with no limit and no fee. You skip one month at a time by clicking "Skip the Month" between the 1st and 5th, so repeat it each month you don't want to be billed the $69.95 monthly membership fee.
